Greek Couscous Recipe



Easy 10 minute 4 step recipe that I can eat over and over again! A 10 minute recipe that you can eat for lunch or snack on for a week. For my job I am in the car all day and I love this recipe because it can be eaten hot or cold, no microwave necessary. It has helped me from not stopping to get fast food everyday that I am on the road. I hope you love and enjoy this recipe as much as I do, healthy and fulfilling!


 




1 box couscous (I use )

1 large cucumber

10 oz grape tomatoes

4 oz kalamata olives pitted

4 oz feta cheese (I use Athenos brand & buy it already crumbled)

salt (I use garlic salt)

pepper

2 tbsp olive oil

Instructions:

  1. Get out a pot and add 2 cups of water and 2 tablespoons of olive oil. Once the water is boiling, add in the whole box of couscous and stir. Remove from heat, put lid on, and let sit for 5 minutes.

  2. While the couscous is cooking in the pot (not over heat), cut up the rest of the ingredients. I use a whole cucumber, 1 cup cherry tomatoes, 1 cup of kalamata olives, and an 8 oz container of feta cheese.

  3. After 5 minutes, using a fork, fluff the couscous.

  4. After couscous is fluffed, mix in the cut up cucumber, tomatoes, kalamata olives, and feta cheese. Add salt and pepper to taste. I use garlic salt as I love the added flavor it gives to the couscous. Also optional, but I also add in a little extra olive oil for flavor and to help make it less dry.

  5. Make yourself a bowl to eat and put the rest in a storage container in the fridge to save for later : )
